Christmas is the most magical time of the year and we’d like to help you enjoy it with an old-school recipe for a family feast! For many people (including us), one of the best parts of the festive season is all the yummy food. It’s a time for indulging. A time to forget about your waistline and feast on the most mouth-watering fare, guilt-free!

In the spirit of the season, here’s a saucy family Christmas recipe that will knock your socks off and have your loved-ones begging for more. Enjoy!


Maple-Glazed Ham with Homemade White Sauce and Tangy Salad

Ingredients

  • 4kg leg or shoulder of ham
  • 3/4 cup of pure Canadian maple syrup
  • 3 tablespoons of Dijon mustard
  • 1 orange
  • Cloves for studding the ham.

Method

  1. Preheat the oven to 180C and prepare a roasting pan with aluminium foil.
  2. Use a knife to gently take the outer rind off the ham – and discard it. Then use the knife to cut a diamond pattern on the surface of the ham. Place the ham in the baking dish.
  3. Squeeze the juice of the orange over the ham.
  4. Combine the maple syrup and the Dijon mustard and pour over the ham.
  5. Stick the cloves into the diamond points on the ham.
  6. Cook for half an hour uncovered, then spoon over the sauce so that it infuses into the meat. Return the ham to the oven and cook for a further 30 minutes, or until the ham is golden brown.
  7. Carve in thin slices and serve warm or cold, as per your preference.

Homemade White Sauce

Ingredients

  • 1 can of sweetened condensed milk
  • 1 cup of white vinegar
  • 2 teaspoons of powdered dry mustard
  • Salt and pepper.

Method

Mix all ingredients together and season with salt and pepper to taste. Use as a delicious condiment for your ham.


Tangy Lettuce Salad

Ingredients

  • 3 eggs
  • Salt and pepper
  • 1 tablespoon of dry mustard
  • 1 tablespoon of white sugar
  • 2 tablespoons of brown vinegar
  • ½ cup of thickened cream
  • 1 iceberg lettuce, cut finely into slithers
  • 1 onion, diced
  • 1 avocado, sliced
  • 1 red/ yellow capsicum, cut finely into slithers.

Method

  1. Boil eggs for approximately 12 minutes until they are hard.
  2. Mash the eggs and add salt and pepper.
  3. Add the dry mustard, white sugar and brown vinegar.
  4. Pour in the cream and whisk until smooth. The flavour should be sweet and sour.
  5. In a salad bowl, combine the iceberg lettuce, onion, sliced tomato, avocado and red/ yellow capsicum.
  6. Pour the dressing over and gently mix through the salad. Add salt and pepper to taste.
